Description

VINIFICATION
Wine made from Tempranillo grapes sourced from vineyards with gravel and pebble soils. This variety is globally recognized for how well it combines its fruit aromas with the aromatic nuances of oak. The 2019 vintage was marked by a warmer than usual winter, allowing for good plant dormancy. The rainfall during spring provided proper bud break in the second half of April. The summer was warm and prolonged, resulting in perfectly ripened fruit that is fresh and highly enjoyable in a vintage rated as excellent by the Regulatory Council of Ribera del Duero.

PRODUCTION
The grapes were manually harvested. Alcoholic fermentation lasted for 7 to 9 days at temperatures between 22 and 26°C, followed by a cold pre-fermentation maceration for 3 to 5 days. After a maceration period of 20 days, the free-run wine was drained and separated from the press wine. Once the alcoholic fermentation was complete, the wine underwent aging on fine lees to enhance complexity in the mouth, while also undergoing malolactic fermentation for approximately three to six weeks. The spring rainfall allowed for proper bud break in the second half of April. The summer was warm and prolonged, resulting in perfectly ripened fruit that is fresh and highly enjoyable in a vintage rated as excellent by the Regulatory Council of Ribera del Duero.

OLFACTORY PHASE
The presence of slightly ripe and stewed red fruit aromas stands out, along with hints of black fruit. Notes of coffee, toffee, subtle spices, and some toasted nuances from the barrel are also present.

GUSTATORY PHASE
A powerful and well-structured wine that fills the mouth with polished tannins and excellent acidity. Ripe red fruit flavors blend with the toasty and roasted notes, translating precisely onto the palate, leading to a clean and persistent aftertaste. It has great aging potential.

PAIRING
It has the ability to enhance dishes such as hearty rice dishes, pasta like lasagna, and it pairs perfectly with grilled, roasted, fried, or grilled chicken dishes. It also pairs wonderfully with aged cheeses.

Soils: Alluvial soils with numerous pebbles, gravels, and sands. In the
subsoil, there is a clay horizon under a layer of gravels and pebbles with
limestone deposits.
Climate: Mediterranean climate with a predominant continental
influence.
CULTIVATION:
Training System: Cordón Royat.
Irrigation: 40% dry-farmed, 60% irrigated.
Planting Density: 2.9 x 1-1.5 meters.
Management: 11 hectares under organic farming and 76 hectares under
integrated production based on weather monitoring using a sensor
network, geographic information systems, and satellite imagery.
WINEMAKING:
Harvest: The date is determined based on the evolution of the phenolic
maturity index and the different analytical parameters considered
appropriate for each type of wine.
Winemaking Method: Maximum respect for the fruit and the viticultural work carried out in the vineyard is sought, preserving the quality of
the grapes. The grapes are destemmed by hand without crushing the
berries. They are then gravity-fed into the tanks, avoiding the use of
pumping elements
